Poita bhaat and aloo pitika is a traditional dish from the northeastern Indian state of Assam. It's a simple yet flavourful meal consisting of steamed rice, called bhaat, served with aloo pitika, which is mashed potatoes tempered with mustard oil, onions, chillies, and aromatic spices.
2 cups of rice 3 medium potatoes, boiled and peeled 2 tablespoons of mustard oil 1 teaspoon panch phoron (mix of fennel, cumin, mustard, fenugreek and nigella seeds) 1 teaspoon of ginger paste 2 green chillies, finely chopped 1 medium onion, finely chopped 1/4 teaspoon turmeric powder Salt to taste Chopped cilantro for garnish
Cook the rice in the cooker until tender. Set aside.
Mash the boiled potatoes well with a fork.
Heat oil in a skillet over medium heat. Add the panchphoron and let them splutter.
Add the ginger paste and green chillies. Sauté for one minute.
Add the chopped onions. Sauté until translucent.
Add the mashed potatoes, turmeric powder and salt. Mix well. Fry for 2-3 minutes.
Remove from heat and garnish with cilantro.
Serve the aloo pitika warm with hot, steamed rice.
