A delicious chicken stir fry flavoured with fresh basil, soy and garlic, pairs perfectly with a bowl of rice for a working lunch that can be ready in a matter of minutes.

250 grams chicken thighs, cubed 1 tablespoon minced garlic ½ tablespoon minced ginger 100 grams basil leaves, torn 1 tablespoon soy sauce Juice of ½ lemon 2 teaspoons oyster sauce 1 teaspoon sugar 2 birds eye chillies, chopped 2 green onions, chopped 1 tablespoon sesame oil Salt and pepper, to taste

Heat the oil in a pan and add the minced garlic and ginger to cook until aromatic.

Add the chicken thighs and stir well to caramelise the pieces until lightly browned.

Mix together the oyster sauce, soy sauce, lemon juice, sugar and birds eye chillies in a small bowl and pour over the chicken.

Once the liquid turns glossy and coats the chicken, add the torn basil leaves and adjust seasoning with salt and pepper.

Turn off the heat and sprinkle the green onions. Serve warm over rice.
