Super healthy and tasty dish, Full with nutritious values and benefits with vegan curry and luscious vegetables.
¼ cup cashews 2 dates 2 onions 8 cloves garlic 1 grated ginger ¼ teaspoon cinnamon ¼ teaspoon whole blackpeppercorns 1 small bay leaf 6 oz. green beans 1 cup carrots 1 red bell pepper
¼ teaspoon ground turmeric ¼ teaspoon ground coriander ¼ teaspoon ground cumin ⅛ teaspoon cayenne pepper 1 cup fresh or frozen green peas Sea salt, to taste 1 tablespoon lime juice Steamed grains or whole wheat
Take a bowl and add ½ cup warm water now soak cashews & dates for 20 minutes.
Now In a saucepan combine the next six ingredients (through bay leaf). sauté them well.
Steam beans, carrots and bell peppers in saucepan, let it sit for around 5-7 minutes.
Take out the soaked cashews and blend them with onion mixture sautéed before.
Now, Pour paste into saucepan. Add 1 cup water & boil. Add steamed vegetables. Cook 3 to 5 minutes.
