There are many experimental dishes you can prepare using potatoes, sweet potatoes, beetroot, etc. Taro roots, on the other hand, remain unexplored like jackfruit. These are perfect to prepare vegan kebabs and serve them for a vegetarian feast during the festive season.
500 grams of boiled arbi 2 boiled potatoes 1 tsp cumin, fennel powder ½ tsp turmeric, pepper 1 tsp coriander, red chilli 1 tbsp ginger-garlic paste 1 tbsp lemon juice 2 tbsp coriander leaves ½ tbsp green chilli paste Salt to taste Oil for frying
Boil and peel taro roots and potatoes. You can also use sweet potatoes or raw bananas.
Mash the ingredients in a large mixing bowl. Top the blend with spices.
Combine spices nicely and add lemon juice and coriander leaves on the top.
Divide the mixture and shape it into kebabs.
Shallow-fry kebabs in hot oil until the crust is crispy and the insides are juicy.
Serve the kebabs with chutney of your choice.
