Apple Pie Bread: The New Banana Bread

Trying to save some apples that are past their eating prime? this simple recipe will be the solution! Move over banana bread, there's a new favourite in town.

Ingredients

⅓ cup light brown sugar 1 teaspoon ground cinnamon ⅔ cup white sugar ½ cup salted butter, softened 2 eggs 1½ teaspoons vanilla extract 1½ cups all-purpose flour 1¾ teaspoons baking powder ½ cup milk 1 apple, peeled and chopped

Step 1

Preheat oven to 190 degrees C and grease a mid-sized loaf pan. Cream the white sugar and butter until light and aerated. Beat in the eggs one at a time until incorporated. Add in the vanilla extract and stir it through the batter.

Step 2

In a separate bowl mix the flour and baking powder together and then stir the creamed butter into the dry ingredients. Add the milk and whisk until smooth.

Step 3

Pour half the batter into the loaf pan and sprinkle in half the chopped apples, brown sugar and cinnamon over the top. Layer in more batter and the rest of the apples, cinnamon and sugar. Bake for 30-40 minutes and serve warm with cream or ice cream.
