Raw mangoes are widely celebrated in Andhra Pradesh especially through a dish called mamidkaya muvvulu pachadi or raw mango chutney. Pachadi in Telugu refers to a chutney. Mango pachadi is a balance of sweet, tangy and spicy flavours. Take a look at the recipe here.
300 grams raw mangoes, diced 100 grams white roasted sesame seeds 2-3 green chillies 1 clove of garlic 1 tsp mustard seeds, powdered ¼ tsp fenugreek seeds, powdered Salt to taste ½ tsp cumin seeds ½ tsp mustard seeds ½ tsp split urad dal 7-10 curry leaves 1 dry red chilli A pinch of asafoetida (hing) 1 tbsp sesame seeds (til)
Powder the roasted sesame seeds.
Put the raw mango pieces along with turmeric and little salt in a pan and cook for about 10 minutes on low heat. The mangoes will become soft and mushy.
Blend the mangoes with powdered sesame seeds, mustard seeds, fenugreek seeds, green chillies, garlic and salt. Make a thick paste, do not use water.
Transfer pachadi to a bowl. Heat oil in a pan and when it’s hot add mustard seeds, cumin seeds, urad dal, and curry leaves, till they crackle. Switch off the flame and add asafoetida and red chilli. Pour the tempering over the pachadi and mix well.
