Perfect for those who love spicy , this Andhra-style chicken is dry delicacy that will have you licking your fingers clean!
500 grams chicken 2 tablespoon virgin olive oil 2 sprig curry leaves 3 green chilli 1/2 teaspoon black pepper 12 cashews 1 1/2 tablespoon lemon juice 2 large onion 1 tablespoon ghee salt as required garam masala powder as required
2 tablespoon coriander powder 2 inches cinnamon 8 clove 4 black cardamom 1/2 teaspoon cumin 1/4 teaspoon fennel seeds For Marination 1/4 teaspoon turmeric 1 tablespoon red chilli powder 1/2 tablespoon garlic paste 1/2 tablespoon ginger paste 50 grams yoghurt (curd) For Garnishing 7 sprigs coriander leaves
First rinse the chicken thoroughly under running water and marinate it in with all the marinating ingredients in a bowl. keep aside for an hour.
Meanwhile, peel and chop onion, coriander leaves green chilies and curry leaves in a bowl. Crush the cashews into powdered form and keep aside.
Once the chicken is marinated, cook ghee and onions in a large pan on low flame till the onions become translucent. Now add the marinated chicken in it and cook covered till soft and tender.
Meanwhile, heat oil in another pan over medium flame and add curry leaves and green chilies to it. Saute for a few seconds on low flame. Add the cooked onion-chicken and the powdered spices.
Fry on high flame till all the spices are absorbed by the chicken. Once done, add the cashew and pepper powder in the pan. Keep stirring for 3 to 4 minutes.
Once the chicken fry is ready garnish with fresh chopped coriander leaves, lemon juice and then serve hot.
