Anda Ghotala is a delightful Indian egg dish, bursting with flavours. This spicy and hearty recipe combines boiled eggs with a medley of aromatic spices and vegetables for a satisfying breakfast or brunch option.

3 tbsps of butter 1 tsp of cumin seeds 8 cloves of garlic, minced 2 medium-sized onions, finely chopped 2 tomatoes, finely chopped 2 green chillies, finely chopped 1 tsp of turmeric powder 2 tsp of red chilli powder 1 tsp of ground cumin 1 ½ tbsps of pav bhaji masala 4 boiled eggs, roughly chopped 4 whole eggs Salt, to taste

In a pan, melt the butter over medium heat. Once the butter has melted, add the cumin seeds and let them sizzle.

Add the minced garlic and sauté for a few seconds until aromatic. Add onions and green chillies sand saute til slightly browned.

When the onions are ready, sprinkle in salt, red chilli powder, turmeric powder, ground coriander, and ground cumin. Stir to combine the spices.

Incorporate the finely chopped tomatoes and add a bit of water. Cover the pan with a lid and let the tomatoes cook until they turn slightly mushy.

After about 5 minutes, uncover and gently mash the onions and tomatoes together. Mix in the pav bhaji masala.

Pour 2 whisked eggs onto the pan with the masala. Scramble the eggs with the onion-tomato mixture over medium heat.

Add the roughly chopped boiled eggs to the mixture and mix thoroughly.

In another pan, prepare 2-3 sunny side up or fried eggs. To serve, place the sunny side up or fried eggs on top of the egg mixture. Serve with buttered pav.
