Anarse is a traditional sweet made from rice and jaggery; it has a crunchy and nutty texture. It is prepared during Chhath Puja, Anarse is a symbol of good luck and is enjoyed as a divine treat. Made with minimal ingredients, it might take a bit of time to make it, but a bit of patience is worth it:
1 cup rice 1 cup jaggery 1 tbsp white sesame seeds 2 tbsp ghee Ghee for frying
Wash and soak the rice for 3 days; change the water daily.
Drain and spread the rice to dry. Grind to a fine powder once dry.
Mix rice flour with grated jaggery. Knead with ghee to a firm dough. Let it rest for 2 hours.
Take small portions, make balls and flatten them slightly. Dip one side in sesame seeds.
Heat ghee in a pan on a medium flame for frying. Place Anarse in ghee, sesame side up. Fry on low flame till golden.
Drain excess ghee and cool completely before serving. Enjoy this Chhath Puja treat!
