Anahita Dhondy's Chattisgarhi Fara, A Leftover Rice Snack Recipe

As part of her regional recipe series exploring the lesser known dishes from across India, Chef Anahita Dhondy has given us a new treat to try. Use up all your leftover rice n this breakfast and snack time favourite from the heart of Chattisgarh.

Ingredients

½ cup Rice flour ½ cup Cooked rice Salt (to taste) 1 Onion (sliced) 1 tsp Mustard seeds 1 tsp White sesame seeds 10-12 Curry leaves 2 Green chillies 2 tbsp Oil

Step 1

In a bowl take rice flour and add cooked rice along with salt and bind the dough.

Step 2

 Now for steam grease the steamer plate with oil. Make finger-like shape from the dough and keep it in the steamer for 15 mins.

Step 3

For tadka - in a fry pan add oil, mustard seeds, sesame seeds, curry leaves and chopped onion. Sauté for for few seconds. Add the faras and sauté for 1 min.

Step 4

Serve fresh with tomato chutney.
