Loaded with nutritious and hydrating ingredients, such as tomatoes, bell peppers, olives, and zucchini, pasta salad is a satisfying and an easy-to-whip-up summer staple. Here’s a simple recipe to enable you to make this no-fuss dish from the comfort of your home.
1 packet dried pasta, such as fusilli or penne 1 cup cherry tomatoes 1 cup sliced zucchini 1 cup sliced bell pepper 1 cup mixed olives 1 cup grated parmesan 1 cup mozzarella balls
½ teaspoon dried oregano ½ teaspoon ground black pepper ½ teaspoon sea salt ½ cup extra virgin olive oil ½ cup vinegar, could be red wine, white wine, or champagne vinegar
Boil salted water in a pot; add pasta to the boiling water and let it simmer for about 10 minutes or till it becomes soft.
In a separate bowl, whisk olive oil, salt, pepper, oregano, and vinegar till they have melded properly.
Add the softened pasta to the salad dressing and blend the two mixtures thoroughly to ensure that their flavours combine well.
Introduce the remaining ingredients, such as tomatoes, bell peppers, zucchinis, olives, mozzarella, and parmesan to the pasta-dressing mixture, and blend well.
Season the salad with extra salt and pepper, if required, plus add garnishes like parsley or basil, if desired; your replenishing pasta salad is ready to relish!
