Making refreshing homemade ice cream with fresh fruit is a delightful way to beat the summer heat. The secret to creating creamy, flavourful fruit ice cream is choosing ripe, juicy fruit and combining it with a rich custard base.
2 cups of chopped fruit of your choice 2 cups of heavy cream 1 cup of whole milk 1/2 cup of granulated sugar 4 large egg yolks
Wash and hull the fruits before chopping them into bite-sized pieces.
In a saucepan, combine the heavy cream, milk, and sugar and heat over medium-low, stirring occasionally, until the mixture begins to steam, and the sugar has dissolved.
Whisk the egg yolks in a bowl and slowly drizzle 1/2 cup of the hot cream mixture into the yolks while whisking continuously. This tempers the yolks, so they do not scramble when mixed with the hot liquid.
Slowly pour the egg mixture back into the saucepan with the remaining cream mixture while continuing to whisk. Cook over medium-low, stirring constantly, until the custard thickens slightly.
Remove from heat and strain through a fine mesh sieve into a bowl to remove any bits of cooked egg. Allow the custard to cool to room temperature, then refrigerate until completely chilled for at least 4 hours.
Take out the frozen batter, cut it into chunks and blend it in a blender until you get an ice cream-like texture. Scoop it out into bowls, top it up with fruits and serve chilled.
