Amrood ki sabzi is a traditional Indian curry originating from Rajasthan. The curry is usually made with a combination of guava, salt, sugar, lime juice, garlic, cumin, oil, turmeric, chili powder, and coriander. The chili powder, turmeric, and coriander are mixed with water, while the cumin seeds are fried in oil. Once prepared, this guava curry is served while still hot and it's usually accompanied by Indian flatbreads. Here's the recipe for Amrood Ki Sabzi.

1 cup Guava pieces/ Amrood 1/4 cup Jaggery / Gud 1/2 cup Water 4 tsp Oil 1/2 tsp Mustard Seeds / Rai 1/4 tsp Cumin Seeds / Jeera 1/4 tsp Asafetida / Hing 1/4 tsp Red Chilli Powder / Lal Mirchi 1/3 tsp Turmeric Powder / Haldi 1/4 tsp Coriander Powder / Dhaniya 1/2 tsp Salt Coriander Leaves for garnishing

In a cooking pan, add oil and allow it to heat nicely. Then add mustard seeds cumin seeds, Asafoetida, guava pieces (do not peel guava, just remove seeds and cut into small pieces) and sauté for 2 to 3 Min.

Now add red chilli powder, turmeric powder, coriander powder, salt and mix well. Then add jaggery, water and give a nice mix.

Cover the lid and simmer on low flame. Guava Sabzi is now ready to serve with roti and garnish with coriander leaves.
