Amarkhand is a popular Indian delicacy that is created by straining yoghurt and then adding sugar, saffron, and cardamom to give it flavour.
To remove excess moisture from yoghurt, hang it in a muslin cloth for a few hours.
Whisk together the hung yoghurt, sugar, saffron, and cardamom in a large mixing bowl.
Blend thoroughly until there are no lumps left.
Put the mixture in the fridge for a few hours to let the flavours meld.
Garnish with pistachios or almonds and serve cold in separate bowls.
