This tart and tangy rasam made with India gooseberries or amla and is a healthy twist on the otherwise usual South Indian rasam. Consume it warm as it is or mixed with rice, for a light dinner or when you’re down with the flu to get an instant immunity boost as well as quick recovery.

6 amlas, chopped 1 tomato, diced 2 teaspoons black peppercorns, crushed 1 teaspoon cumin seeds 1 pinch asafoetida 2 cups water 1 teaspoon turmeric powder 1 tablespoon chopped coriander Salt, to taste

3 teaspoons ghee 1 red chilli, broken 5-6 curry leaves 1 teaspoon mustard seeds

Combine all the ingredients for the rasam in a saucepan and simmer for 10-12 minutes.

Once the chopped amla is softened, season with salt and turn off the heat.

Heat the ghee in a smaller pan and allow the red chilli, mustard seeds and curry leaves to splutter.

Spoon the tempering over the hot rasam and stir well to combine.

Serve hot with rice, ghee and a vegetable accompaniment of your choice.
