Aloo Pudina Curry is a refreshing and flavourful Indian dish that combines tender potatoes with the vibrant taste of mint. This aromatic curry is perfect served with rice or flatbreads.

3 medium potatoes, peeled and cubed 1 cup fresh mint leaves 1 onion, finely chopped 2 tomatoes, pureed 1 tsp ginger-garlic paste ½ tsp cumin seeds ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder ½ tsp garam masala Salt to taste 2 tbsp oil

Heat oil in a pan, add cumin seeds. Once they splutter, add chopped onions and sauté until golden.

Stir in ginger-garlic paste and sauté for 1-2 minutes until fragrant.

Add tomato puree, turmeric, red chilli, and coriander powders. Cook until oil separates.

Blend mint leaves with a little water to make a paste. Add it to the pan and cook for 3-4 minutes.

Toss in potato cubes, coat them with the masala, and sauté for 5 minutes.

Pour water, add salt, and bring to a boil. Cover and simmer until potatoes are tender.
