Picture a golden paratha stuffed with flavoured potato filling, pairing perfectly with a bowl of cool curd. It is an ultimate soul-soothing dish from North India that perfectly balances spice and comfort and is a perfect breakfast, lunch or dinner recipe.
For the Dough: 2 cups whole wheat flour Water as needed ½ tsp salt 1 tsp oil For the Filling: 3 mashed boiled potatoes 2 finely chopped green chillies 2 tbsp coriander leaves ½ tsp garam masala ½ tsp red chilli powder ½ tsp cumin powder Salt to taste For Serving: 1 cup thick curd Pickle or chutney
Make a soft dough with whole wheat flour, salt, water and oil. Let it rest for 20 minutes.
Mix boiled, mashed potatoes with chillies, coriander, and spices.
Roll out the dough and potato filling, seal and gently roll it into a circle.
Cook on a hot tawa with ghee until it turns golden in colour.
Serve the aloo ka paratha with curd and pickle.
