Why eat a basic lunch of aloo-gobhi-roti when you can put a spin on it with this fun and delicious taco twist that has all the fixings of a taco with a desi twist?
½ cup cauliflower florets 1 large potato, diced 1 teaspoon curry powder 1 teaspoon turmeric powder 1 teaspoon chilli powder ½ teaspoon garam masala 2 teaspoons onion powder 2 teaspoons garlic powder 4 rotis/tortillas ½ avocado, sliced 1 red onion, sliced Juice of 1 lemon 3 tablespoons sour cream 2 tablespoons grated cheese 2 tablespoons vegetable oil Salt and pepper, to taste
Mix all the dry spice powders together in a small bowl.
Drizzle the oil over the potatoes and cauliflower and coat them in the dry spice mix thoroughly.
Season with plenty of salt and black pepper and roast in a moderate oven for 20 minutes, until crispy.
Meanwhile, steep the red onion in some lemon juice and salt.
Warm up the rotis or tortillas and fill up with the cooked potato-cauliflower mixture.
Dollop some sour cream over followed by the avocado, pickled onions and grated cheese. Serve warm.
