Almond Plum Cake is a lovely combination of soft plums and nutty almonds. Perfect for special occasions or a cosy afternoon snack. Light and flavourful with a moist texture and plum sweetness cutting through the almond's richness. Here’s how to make it at home:
1 cup all-purpose flour ½ cup almond flour ½ cup butter ¾ cup sugar 2 eggs 1 tsp vanilla essence ½ tsp baking powder ½ tsp cinnamon powder 4-5 plums, sliced ¼ cup milk A pinch of salt Almonds for garnish
Preheat the oven to 180°C (350°F) and grease a round tin. Cream the butter and sugar until light and fluffy.
Add the eggs individually, then the vanilla essence and beat well.
Sift the all-purpose flour, almond flour, baking powder, salt and cinnamon.
Add the dry ingredients to the wet mixture, alternating with milk. Fold until smooth.
Pour into the tin, place the sliced plums on top and sprinkle with chopped almonds.
Bake for 35-40 minutes or until a toothpick comes out clean. Let it cool and slice!
