As the festival season is around the corner why not make this heavenly combination of almond and coconut? Almond and coconut barfi are easy to make at home and are perfect for festivals like Rakhi or Diwali. Here is how to make this barfi:
½ cup freshly grated coconut ¼ cup almonds blanched ½ cup cane sugar (brown sugar) 1-½ tsp white poppy seeds (khus khus) 2-3 tbsp water for grinding butter/ghee
Soak poppy seeds in hot water.
Add almonds to boiling water and keep aside.
Drain and rinse under cold water after 5 mins and remove the skin.
Take a grinder and add poppy seeds, grated coconut and blanched almonds.
Add water to make a smooth paste.
Smear a little butter or ghee onto a flat plate and keep aside.
Take a pan and add sugar and coconut-almond paste, mix it until the mixture bubbles.
Stir continuously to form a dough-like structure.
Remove it onto the greased plate. Grease your hands and pat it to form a flat structure.
Once cooled cut it into diamonds or squares with a knife.
