One of the most cherished delights during the celebration of Ganesh Chaturthi is puran poli. It is a Maharashtrian delicacy that no other regional recipe can match. Here is its quick recipe.

For Puran 3 cups water 1 cup chana dal 1 tsp dry ginger powder 2 tbsp ghee 1 cup jaggery powder 1 tsp fennel powder ¼ tsp nutmeg powder ½ tsp cardamom powder

Step 1

Rinse and soak chana dal for at least 30 minutes and cook in a pressure cooker for 5-6 whistles.

Step 2

Keep the stock aside and temper the thick dal with ghee, ginger powder, nutmeg powder, cardamom powder, and fennel powder. Add jaggery to this mix.

Step 3

Keep it aside to cool off. Once dry, mash the mixture using a potato masher. Meanwhile, prepare the dough for poli.

Step 4

After resting the dough for 15-20 minutes, take medium-sized balls and stuff them with small puran spheres. Roll like a stuffed paratha.

Roast puran poli on a hot tawa using ghee until both sides are brown and slightly crispy.
