Aglio e Olio is a simple Italian pasta dish that packs a punch. It is the essence of Italian cooking with garlic (Aglio), olive oil (olio), and a pinch of chilli. Perfect for a quick weeknight dinner or a comfort meal. Here is how you can make it at home.
200g spaghetti 4 tsp extra virgin olive oil 6-8 garlic cloves 1 tsp red chilli flakes Salt, to taste 2 tsp chopped fresh parsley 1 tsp Parmesan cheese Water
Fill a large pot with water and add a pinch of salt. Bring to a boil, then add the spaghetti.
Cook for 8-10 minutes or until al dente. Drain and set aside, reserving ½ cup of pasta water.
In a large pan, heat olive oil over medium heat. Add sliced garlic and sauté until golden.
Stir in red chilli flakes and cook for 30 seconds.
Add cooked spaghetti to the pan, toss to coat and add reserved pasta water as needed.
Sprinkle parsley and Parmesan cheese. Serve hot!
