Rajasthani Khoba Roti gets a vibrant twist with the addition of beetroot, lending both colour and subtle earthy sweetness to this traditional Indian bread.

Roast or Boil 1 Beetroot and puree to a fine paste. Add this puree to 1 Cup whole wheat flour along with salt and a little oil or Ghee.

Knead to a medium soft dough, make small balls and roll out. Roll out the rotis slightly thick.

Now with the help of tweezers make pinch design on the roti or you can simply] pinch with your fingers.

Brush a little water at the bottom of the roti and transfer to a tawa. Cook for a couple minutes on a low flame and now turn the tawa and cook the rotis directly on the flame. Once done, serve hot with a drizzle of ghee paired with chutney or dahi.
