Sourdough bread, or simply sourdough, is a naturally leavened bread, meaning it doesn't feature the use of commercial yeast in its recipe. Instead, it uses a starter that allows it to rise. Here's a quick one for you to try:
1 cup of active sourdough starter 1 1/2 cups of water 4 cups of bread flour 2 teaspoons of salt
Combine starter, water, and flour. Rest for 30 minutes.
Knead in salt until smooth. Rest for 3-4 hours, folding every 30 minutes.
Shape into a loaf, place in a floured basket, and rise for 2-4 hours or overnight in the fridge. Heat the oven to 450°F with a Dutch oven inside.
Score the dough and bake in a Dutch oven for 20 minutes covered, then 20–25 minutes uncovered. Cool completely before slicing.
