A Simple 6-Step Broccoli Soup for Winter Comfort

This easy and delectable broccoli soup will ensure that your winter evenings are warm and cosy, and each and every spoonful will bring you comfort.

Step 1

To make a healthy broccoli soup, gather fresh broccoli, garlic, onions, vegetable broth, cream (or a dairy-free substitute), and seasonings like pepper and salt. 

Step 2

To make the garlic and onions translucent, chop them and sauté them in a saucepan with a little olive oil. Your hearty soup will have this tasty base. 

Step 3

Stir in the chopped broccoli florets with the aromatics and add to the saucepan. After a few minutes of cooking, the broccoli will soak up all the savoury flavours. 

Step 4

Bring the broccoli and vegetable stock to a low boil, being sure to cover the broccoli with broth. Simmer until broccoli is cooked, releasing its essence into the broth. 

Step 5

For a silky smooth soup, use an immersion blender or a blender in batches. Blend until smooth and creamy. After mixing for a velvety texture, add cream or your choice dairy-free alternative for more richness. 

Step 6

Add salt and pepper to the soup according to your taste. Spoon into plates, and top with whipped cream, grated cheese, or olive oil, if preferred. This hearty broccoli soup is perfect for a cold winter night.
