200 grams semolina 1 onion 1 potato 1 capsicum (green pepper) 1 tomato 1 carrot 1/2 teaspoon mustard seeds 1/2 teaspoon cumin seeds 4 chopped green chilli 1 small chopped ginger 2 dry red chili 100 mililitre vegetable oil 1/2 teaspoon chana dal 1/2 teaspoon urad dal 1/4 cup peas water as required
Take a sizable pan, fill it with vegetable oil, and heat it over a medium burner. When oil begins to huddle add Mustard seeds, cumin seeds, chopped green chilies.
With a gentle mix add Ginger, and whole red chilies. Using a wooden spatula, thoroughly combine the ingredients.
In the pan, add peas, chana dal, and urad dal, stir well. Add the curry leaves and stir-fry for a short while.
Now chop each veggie individually in the meantime. Add the diced onion, potato, tomato, carrot, and capsicum to the pan.
Fill the pan with enough water and salt it generously. Put a lid on the pan and cook it on a medium heat.
Simmer until a rich gravy forms and the vegetables are tender. Take a nonstick pan and roast the semolina for 1-2 minutes.
After veggies are cooked, gradually add roasted semolina in little quantity, stir to prevent the formation of lumps.
Add the upma in a bowl and add in the Cashews and mint leaves make a tasty garnish. Serve hot.
