A perfect salad to toss up to chill on a sultry afternoon. Both watermelon and mint have cooling properties and are perfect to load up on in summers.
6 cups cubed seedless watermelon 2 tbsp minced fresh mint 1 tbsp lemon juice 1 tbsp olive oil 2 tsp sugar
To make the salad, first place watermelon and mint in a large bowl. Toss them well.
Now in a small bowl, whisk lemon juice, oil and sugar until sugar is dissolved.
Drizzle the mix over watermelon and mint salad; toss gently to combine and serve.
