In recent times, there has been a surge in alternative grains and flours due to the rise of gluten sensitivities and the desire to eat nutritious foods. Bread made from millet flour offers an option for those with dietary restrictions. Here is an easy millet bread recipe to try at home:

Ingredients

2 cups of millet flour  1 cup of warm water  2 tablespoons of honey or maple syrup  2 ¼  teaspoons active dry yeast  1 teaspoon salt  2 tablespoons of olive oil  1/4 cup seeds (such as sunflower or pumpkin seeds) for topping

Step 1

In a small bowl, mix warm water, honey or maple syrup and yeast. Let it sit for 5–10 minutes until frothy.

Step 2

In a mixing bowl, combine millet flour and salt. Add the activated yeast mixture and olive oil. Knead the dough until it becomes smooth and elastic.

Step 3

Place the dough in a greased bowl, cover it with plastic wrap and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 4

After the dough has risen, punch it down to release the air. Give it the shape of a loaf and place it in a greased loaf pan. Cover the loaf with a kitchen towel and again let it rise for about 30–40 minutes until it’s puffy.

Step 5

Preheat the oven to 190°C. Sprinkle seeds on the loaf and bake for 30-35 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.

Step 6

Cool the bread in the pan for 10 minutes and then transfer it to a wire rack to cool completely before slicing.
