Back to school can be a stressful time, for children AND for parents. Take some of the pressure off with these simple 10 minute recipes that you can make for your child's lunch or snack box.
Spread tomato sauce or pizza sauce on a roti. Top with shredded cheese, sliced bell peppers, onions, and any desired toppings and bake in the oven until the cheese melts and the edges are crispy.
Cook pasta of your choice according to package instructions and drain. Toss with chopped cucumbers, tomatoes, bell peppers, olives, and boiled corn. Add a dressing made of your choice.
Sauté mustard seeds, curry leaves, and chopped vegetables. Add semolina and water. Cook until the mixture thickens. Garnish with coriander leaves.

Spread grated cheese on a tortilla, add chopped onions, chillies and tomatoes, fold it in half, and cook in a pan until the cheese melts. Cut into wedges and serve with salsa or chutney
Steam idli batter in a greased mini muffin tin. Serve with coconut chutney or tomato sauce.
Sauté mixed vegetables with spices. Add soaked basmati rice and water. Cook until the rice is tender. Garnish with fried onions and fresh coriander.
Sauté paneer with spices, onions, and bell peppers. Spread mint chutney on a roti, add the paneer filling, and roll it up tightly.
