Most Indians are facing the tomato price hike, and with these methods to preserve fresh and flavourful tomatoes, the inflation might just get a bit easier to handle. Here are the methods you should try.
Wash and clean fresh tomatoes and then pour some hot wax into the top knob or sepal area of the fruit to seal the freshness for days.
Blanch and peel the tomatoes, pack in sterilized jars with lemon juice or vinegar, seal the jar and process in a water bath for an hour before storing.

Lay out sliced tomatoes in the sun, allowing the water to evaporate, resulting in concentrated flavors.
