Ambur Biryani

This variant originated in Ambur, Tamil Nadu, where short-grain rice is cooked with tender meat and spices. The recipe has red chilli powder in high proportion.

Thalassery Biryani

Thalassery biryani originated in Kerala, where chicken or mutton is cooked in a blend of spices, including fennel seeds and layered with rice.

Kerala Fish Biryani

Hyderabadi Biryani

Among the most famous South Indian variants of biryani, Hyderabad biryani cooked with mutton is the most famous. It uses a different blend of spices for aroma and flavours.

Chettinad Biryani

This biryani originated in Chettinad, Tamil Nadu, and uses black stone flowers, star anise, and dried flower pots to cook rice and meat. It boasts a distinct taste.

Kozhikode Biryani

This variant of biryani is prepared with short-grain rice that adds a unique texture. It is also referred to as Calicut biryani and is often served with pickle and raita.

Malabar Biryani

Malabar biryani also uses short-grain rice in the preparation along with coconut milk and spice. It is prepared with either fish or chicken.
