Asian cuisine is known for its noodle dishes that have been popularised all over the world. You might be familiar with a few, but there are many varieties that may be unknown to you. Here are a few:

Ramen Noodles

Made from wheat flour, salt, water, and kansui (a type of mineral water), these are the most popular types of noodles. Famous for ramen soup, a brothy umami-rich dish packed with different veggies, meats, seasonings, and garnishes.

Udon Noodles

These noodles are wheat-based and have a fat and chewy texture. These are often served fresh with broth-based dishes.

Lo Mein

Made up of wheat flour and eggs, these noodles have a soft and chewy texture. These noodles are usually cooked before and then later mixed with veggies, meats, and sauces.

These are very thin Japanese noodles made from superfine wheat flour, water, and salt. Highly popular in summer with cold somen noodles dipped in tsuyu sauce.
