Asian cuisine is known for its noodle dishes that have been popularised all over the world. You might be familiar with a few, but there are many varieties that may be unknown to you. Here are a few:

Made from wheat flour, salt, water, and kansui (a type of mineral water), these are the most popular types of noodles. Famous for ramen soup, a brothy umami-rich dish packed with different veggies, meats, seasonings, and garnishes.

These noodles are wheat-based and have a fat and chewy texture. These are often served fresh with broth-based dishes.
