Most people prefer soft fulkas. When prepared right, the roti puffs up the moment you expose it to high flame. Here is how you can make soft and puffed chapati at home.
High-quality flour ensures the chapati has the right texture and flavour. If the atta is stale, your roti will be dense and hard.
While kneading the dough, make sure it is soft - neither too hard nor sticky. Add water gradually while kneading it.
You must leave the dough to rest for at least 15-20 minutes so that gluten develops. It will be easy to roll the dough and the roti will be soft.
When rolling a chapati, make sure all the edges are equally thick. It will be cooked evenly and puff up easily.
While you can semi-cook both sides on low flame when you need to puff up the roti, subject it to high flame.
When storing the roti, cover it. You can also spread hot ghee on it before keeping it in the casserole.
When cooking roti, keep the tawa hot. The minute you see small bubble-like structures forming, flip it over and cook the other side.
