Brine The Meat

If you soak the chicken in the brine solution for at least a couple of hours before frying, it will ensure a juicy texture and a burst of flavour.

Let Chicken Rest

After marinating the chicken and coating it with breadcrumbs or cornflakes, let it rest. You can also freeze it for 15-20 minutes before frying.

Avoid Boneless Chicken

Use the chicken with skin and bones for a deep-fried chicken snack. It is highly likely to be crispy on the outside and juicy on the inside. 

Maintain Temperature

When deep-frying the chicken, the temperature must be maintained between 175°C and 190°C. If it is too high or low, you will end up with burnt or greasy chicken pieces.

Drain Excess Oil

After deep-frying the chicken, you must drain the excess oil and keep the pieces on a paper towel. It will help to maintain the crispy texture.

Coat Chicken Twice

To ensure crispiness, you can coat the chicken pieces twice. After coating it with season flour, dip it into egg wash or cornflour slurry, and coat it again with breadcrumbs.
