Cottage Cheese Alfredo is a low-fat and low-calorie version of Alfredo Pasta which is traditionally made with Parmesan. Unlike the original, this recipe uses Cottage Cheese which results in an equally creamy and delicious but healthier version.

1 cup milk ½ cup cottage cheese 1 tablespoon cornstarch ¼ teaspoon salt ⅛ teaspoon pepper ¼ teaspoon garlic powder or more to taste ½ cup grated Parmesan cheese or Romano cheese Dried basil to taste Dried oregano to taste Fresh chopped parsley for garnish, optional Cooked pasta of choice

Combine all ingredients, excluding basil, in a food processor or blender. Blend until achieving a smooth consistency.

Transfer the blended mixture into a small saucepan and introduce basil and oregano.

Heat the mixture over medium-low heat until it becomes smooth and thoroughly heated.

Adjust seasoning by adding more basil, oregano, salt, pepper, or other desired seasonings to taste.

Allow the mixture to simmer on low heat for approximately 5 minutes, stirring occasionally.

Just before serving, add the cooked pasta to the sauce and let it absorb for a couple of minutes.

Optionally, top the dish with preferred meat or vegetables, garnish with freshly chopped parsley and serve immediately.
