Summer's almost here and the best way to prep for the sweltering heat is by stocking up for some easy desi soups which can be whipped up with some veggies and masala. Let's look at some light soups which can keep you cool all summer!
Blend ripe mangoes, tomatoes, cucumber, bell peppers, onions, garlic, cilantro, lime juice, and a hint of chili powder until smooth. Season with salt and pepper to taste. Chill in the refrigerator for a few hours before serving. Garnish with chopped mango and cilantro.
Cook tomatoes, tamarind paste, garlic, ginger, curry leaves, and spices like cumin, coriander, and black pepper in water until tomatoes are soft. Temper with mustard seeds, dried red chilies, and curry leaves in ghee or oil. Serve hot as a light and tangy soup, garnished with chopped cilantro.

Makai Shorba is a kind of corn soup which can be quite comforting. This Indian soup is made with sweet corn kernels and spices. You can include some other veggies in this recipe to make it more nutritious.
This green soup can be a great summer option. Sauté chopped spinach, onions, coriander, garlic, and green chilies in coconut oil until wilted. Add coconut milk and vegetable broth. Bring to a simmer. Blend until smooth, then return to the pot and season with salt, pepper, and a pinch of garam masala.
