Use A Candy Thermometer

You can use a candy thermometer to monitor the temperature. The syrup needs to reach the soft ball stage (around 240°F or 115°C) for the marshmallows to set properly.

Whip At A High Speed

You must use a stand mixer or hand mixer at high speed. This will take 10-15 minutes of whipping for the mixture to reach the right consistency.

Flavour Infusion

Properly add the flavour to your marshmallows by incorporating extracts in the right amount. More extracts will make the mixture heavy and sour, while fewer extracts will taste bland.

Properly Bloom Gelatin

Ensure your gelatin is properly bloomed by adding cold water and letting it sit for a few minutes. It makes it easier to dissolve.

Let Them Set

Allow the marshmallows to set and dry completely. Cutting them too early can end up in a sticky mess.

Cut With A Hot Knife

When you're ready to cut your marshmallows, dip your knife in hot water. The marshmallow will not stick to the knife.
