This city in northern Maharashtra encapsulates the flavours of the Khandeshi region. Here are some unique dishes you must try from the heart of Jalgaon.
Khandesh's cuisine, influenced by Gujarat, often incorporates fried snacks like Shev. This dish features deep-fried sev in a gravy with onion, coconut, and the famous Kala Masala.
This dish showcases the local green and white eggplant. Prepared with chillies, spring onions, peanuts, and ample oil, it is enjoyed with Kadhi and Kalnyachi Puri.
Crafted from refined flour, piped in uniform coils, and deep-fried, it is soaked in sugar syrup. Served hot with Rabdi or Curd, special essences like kevda or sandal add a distinctive taste.
This dish features dumplings made from besan, green chillies, and coriander in a coconut-onion gravy with kala masala. Best enjoyed with hot rotis and bhaji.
This unique buttermilk incorporates garlic, ginger, coconut, and turmeric. With Bengal gram flour and yoghurt, it complements Marathi dishes like Vafole and Phunake.
Made with the unique Chiu or Chival vegetable in toor dal dumplings (Vafole). This slightly sour vegetable adds a unique taste to the protein-packed dish, often enjoyed with buttermilk kadhi.
The pièce de résistance of Khandeshi meals, is a spicy mutton curry with kala masala. Recognised by the layer of oil (tarri) on top, it's a flavoursome and spicy delight.
