Adding a small amount of baking soda to the gram flour can contribute to crispier pakoras but be careful as adding more will give them a bitter taste.
Fry pakoras in small batches to avoid lowering the oil temperature and making them greasy.
Vegetables tend to release water when fried so be very careful while adding water to the batter.
It is very important to keep the besan batter lump-free for even taste and texture of pakoras.
Pour a small quantity of oil to the batter while mixing. Doing so will improve the consistency of the mixture.
If you are using chopped vegetables in the recipe, ensure that it is completely dry to get perfect crispy pakoras.
Make sure the oil is sufficiently hot before adding the batter for frying or else your pakoras will become soggy.
