Ponkh, or tender Sourgum millet grains are a winter seasonal harvest that is mildly sweet, chewy and almost tastes like fresh corn. It is a good addition to the winter diet due to its warm properties. Make this flavourful appam to relish this delicious winter harvest.

1 cup ponkh (tender jowar/sorghum grains) 1/2 cup rice flour 1/4 cup grated coconut 1 green chilli, finely chopped 1/2 inch ginger, grated Fresh coriander leaves, chopped Salt to taste Water, as needed

Wash the Ponkh seeds thoroughly and soak overnight for 4-5 hours.

Take out the soaked seeds and grind until a coarse paste forms.

Transfer the paste to a bowl and add rice flour, chopped chillies, and grated ginger.

After that, add coconut shreds, salt, and coriander leaves and mix well.

Add water to make a runny but thick batter.

Apply oil to the appam pan and put this batter into moulds. Optionally you can add cheese to make it interesting.

Fry until golden and then serve hot.
