Yeast is a live culture that is utilised in baking, cooking, and brewing. However, not all yeasts are made equal. Each variety has unique qualities that are tailored to a certain use. While some yeasts can be used interchangeably if the recipe is modified, others are so dissimilar that they do not work for all purposes.

Active Dry

This one needs to be dissolved in a warm liquid to activate it. It shouldn't be exposed to hotter liquids than 43 degrees Celsius.

Liquid Yeast

This variety was the most popular back in the day. It is basically a slurry of live organisms, water and flour.

Fresh Yeast

It should stay refrigerated because fresh yeast is perishable. It should be dissolved in a liquid before use.

Instant Yeast

This doesn't need to be dissolved before adding to a recipe. Should be stored in a dry, airtight container.

It is sold in powder, flake or granule form and is known for its cheesy and nutty flavour. Often used as a topping.

This variety is also known as ale yeasts and it rises to the surface when the fermentation takes place during beer-making.
