Ajmer, located in the centre of Rajasthan, is one of the oldest and major cities of the state. The food of the city still heavily features traditional dishes, whether they're sweet or savoury. One must try the rich flavours of Rajasthani cuisine whenever they visit this beautiful city.

Deep-fried, flaky pastries (kachori) filled with a spicy gram flour mixture are served with tangy yoghurt-based curry (kadi).
A sweet version of kachori filled with rich khoya (mawa) and dry fruits, deep-fried and coated with sugar syrup.
Gram flour (besan) dumplings cooked in a yoghurt-based curry with aromatic spices like cumin, coriander, and red chilli powder.
Spicy green chillies are stuffed with a tangy potato filling, coated in gram flour batter and deep-fried until crispy.
Deep-fried pastries filled with a spicy potato and onion mixture are often served with green or imli chutney.
Sweet pancakes made from flour, milk, and sugar are fried until golden brown and usually served with rabri (thickened sweetened milk).
