Keeping microgreens and seasonal greens fresh can be a challenge, especially during peak summer. Even if you store them in a veggie crisper drawer in your refrigerator you may need to take some extra precautions to keep them usable and fresh for several days. Let's look at some functional ways to do this.

Refrigerating with water in a jar

Place the coriander stems in a jar filled with a few inches of water. Cover the leaves loosely with a plastic bag and secure it around the jar with a rubber band. Store it in the refrigerator. This method can keep the coriander fresh for up to two weeks. However, it requires some space in the fridge and regular water changes to maintain freshness.

Damp paper towel method

Wrap the coriander bunch in a damp paper towel. Place the wrapped coriander in a plastic bag or airtight container and store it in the refrigerator. This is an easy method and can keep the coriander fresh for about one week. You’ll need to check the paper towel periodically to ensure it remains damp.

Dry Paper Towel Method

Place the coriander in a dry paper towel and then put it in an airtight container. Store it in the refrigerator. This method prevents moisture build-up and keeps the coriander fresh for about a week, though it might not be as long-lasting as other methods.

Freezing

Wash and dry the coriander thoroughly. Chop the leaves and place them in an ice cube tray, cover with water, and freeze. Once frozen, transfer the cubes to a freezer bag. This method preserves coriander for months and is convenient for cooking, but the texture may change.

Blanching and freezing

Blanch the coriander leaves in boiling water for a few seconds, then immediately transfer them to ice water. Pat them dry, then freeze in airtight containers or freezer bags. Blanching helps maintain the color and flavor better than raw freezing, though it is slightly more labor-intensive.

Herb keeper

Use a specially designed herb keeper container that regulates humidity and allows for some air circulation. This is convenient and effective for keeping herbs fresh for up to two weeks. The downside is that it requires the purchase of a special container.
