Want light and flavourful kebabs for summer? Try veggie pairings with high-protein veggies like brinjals, mushrooms, potatoes and other sources of plant proteins like tofu, paneer etc. Let's explore some delicious vegetarian kebab recipes.
These paneer kebabs are marinated in a mixture of yogurt, lemon juice, ginger-garlic paste, and spices like garam masala, turmeric, cumin, coriander, and red chili powder. The marinated paneer cubes are skewered with bell peppers and onions, then grilled or baked until they have a golden, slightly charred exterior.
A simple yet delicious combination, these kebabs use button mushrooms and colorful bell peppers. The vegetables are tossed in a marinade of olive oil, balsamic vinegar, minced garlic, rosemary, salt, and pepper. After being skewered, they are grilled until tender and caramelized.
Firm tofu is a great protein-packed alternative for kebabs. Cubes of tofu are marinated in a mix of soy sauce, sesame oil, garlic, and ginger, then skewered with zucchini, cherry tomatoes, and red onion. These kebabs are grilled until the tofu is slightly crispy on the outside.
Marinate cherry tomatoes, red onion chunks, bell peppers, and zucchini slices in balsamic vinegar, olive oil, and Italian seasoning. Skewer and grill until vegetables are caramelized and tender. These kebabs have a wonderful tangy flavor.
For a unique and slightly sweet option, try these kebabs made with sweet potato chunks and pineapple pieces. The sweet potatoes are pre-cooked until tender, then skewered with pineapple and brushed with a glaze of honey, soy sauce, and ginger.
Cut tofu into cubes and marinate in a mix of soy sauce, sriracha, garlic, and a splash of lime juice. Skewer with bell pepper pieces, red onion chunks, mushroom caps, and zucchini slices. Grill until tofu is crispy and veggies are cooked through. Perfect with a drizzle of extra marinade.
