Vegetables are literally everywhere- from being the main dish to the side dish, between bread and in juices. This natural nutrient carrier is a staple addition to healthy diets. If you're bored of eating your veggies, try drinking their tangy versions! Here are 6 vegetables you can make soup out of.

They weren't lying when they said "cool as a cucumber." Their seeds have phytonutrients, like carotenoids and flavonoids. Some soups also add crushed walnuts and low-fat yogurt.

This cruciferous vegetable is rich in vitamins K, C, E, B6, as well as chromium and folate. Break them into bite-sized pieces before you throw them in. Some recipes puree it to thicken and flavor the soup.

Now that's a shocker. Your favourite vegetable just got more versatile. They're rich in potassium and vitamin C. Cut them into cubes for a chunky soup. If you puree them, try to limit ingredients like cheese, heavy cream, and bacon that add calories and fat as potatoes are already rich in carbohydrates.

This aesthetic fungi is rich in riboflavin, niacin, selenium, and potassium. They even have some vitamin D, which you can't get from other vegetables. Plus, they're low in calories with almost zero fat, cholesterol, or salt.
