There is no specific season to relish South Indian food. However, the struggle in winter is to get the perfect rise in the batter. Fermenting in winter is a task, and without it, you cannot achieve the right texture and taste of dosa and idli. Here is how you do it.
You must keep the container with batter near a heat source. It can be a heating pad, stove, or hot pan. It will create the appropriate environment for the batter to ferment.
Before pouring the batter, use a pre-heated bowl. It will maintain the temperature and act as a catalyst in the fermentation process.
When grinding the ingredients, you can use warm water. Avoid boiling hot because it will cook the ingredients slightly and ruin the texture.
When soaking lentils and rice for dosa batter, soak fenugreek or methi seeds as well. The natural enzymes in them can fasten the fermentation.
The container you pick for storing the batter should not be tightly sealed. It would affect the rise and texture of the batter.
