In Tamil Nadu, a quick snack called keerai bonda is prepared during snack time to overcome hunger pangs. It has the goodness of spinach leaves and can be your go-to snack while you commute from office to home. Try this recipe.
2 cup besan ½ bunch spinach leaves 1 chopped onion Salt to taste Water as needed Oil for frying 2 tsp chilli powder 1-inch ginger A pinch of baking soda 2 green chillies
Wash spinach or keerai leaves thoroughly and chop them.
Fold in the leaves with besan, chopped onions, ginger, green chillies, and powdered spices.
Add some water to adjust the consistency of the batter.
Sprinkle a pinch of baking soda and stir the ingredients again.
Drop small vadis of this blend into hot oil and fry them until crispy.
Enjoy keerai bondas with ketchup, coconut chutney, tomato chutney, and coffee.
