Poha is a hassle-free and healthy breakfast or snack. To make it healthier, you can replace flattened rice with millet. This recipe will help you add a twist to the traditional delight and include different grains in your diet.
1.5 cups millet poha ½ cup chopped onions 2 tbsp oil 1 tsp sugar 8-10 curry leaves 1 tsp cumin seeds Salt to taste 2 tbsp green chillies 2 tbsp coriander leaves ½ cup peanuts 1 tsp chopped green chillies 1.2 tsp turmeric 1 tbsp lemon juice
Wash millet poha and soak it for 30 seconds to let it soften.
Drain the excess water and keep it aside. Heat oil in a pan.
Add cumin seeds and curry leaves to it. Roast peanuts as well.
Fold in onions and green chillies. After 2-3 minutes, add turmeric, green chillies, salt, and sugar.
Drop in soaked poha and toss the ingredients using a fork.
Drizzle lemon juice and coriander leaves before serving.
