Sweet, decadent, wholesome and delightful, this banana malpua has everything in for you. With the flavour of banana and the comfort of homemade malpua, you can have a satisfying treat for any time of the day.
1 banana 1 cup milk 1 cup wheat flour 2 tbsp rava/suji, fine-grain 1 tsp fennel, crushed ¼ tsp cardamom powder 2 tbsp cream oil, for frying 1½ cup sugar 1½ cup water 3 pods cardamom Pinch of saffron
Blend banana and milk in a blender to make a smooth puree. Transfer it to a large bowl.
Add wheat flour, suji, fennel, cardamom powder, and cream and mix well. Add milk to make it slightly runny.
Whisk to make a lump-free batter and rest it for 30 minutes. Meanwhile, prepare sugar syrup by combining sugar, water and cardamom in a saucepan and boiling it until the sugar melts.
Boil to make the sugar syrup consistency sticky. Add a pinch of saffron and mix well.
Make malpua by ladleing 2-3 tbsp of batter in hot oil and shallow frying it from both sides until golden.
Once fried, drain the oil and put it directly in sugar syrup. Take it out on a serving plate after soaking and garnish with chopped nuts.
