Mushroom curry, with its creamy base and rich flavours, is a comforting food when paired with rice or naan. It has a simple recipe that you can follow to prepare a delicious meal in no time and savour it, irrespective of the weather.
1 tsp ground ginger ½ tsp garam masala & turmeric 1 tsp cumin & fennel seeds 1 chopped onion 2 tomatoes 4-6 garlic cloves 2 green chillies 1 tsp red chilli powder 2 tbsp chopped coriander leaves 1 tsp coriander powder 2 tbsp beaten curd or fresh cream ½ tsp black pepper powder 2 tbsp butter 1 tbsp oil
In a pan, heat butter and oil to cook mushrooms in it. Saute the slices until they turn brown and the water has evaporated.
Heat and butter again in the pan and cumin seeds, fennel seeds, turmeric powder, and ginger-garlic paste along with green chillies.
After a couple of minutes of sauteing, add pureed onion to the kadhai. Once it reduces, add all the remaining powdered spices and wait for the oil to separate.
Add tomato puree and cover the pan. Once you witness the oil separating again, add some hot water and curd or fresh cream.
Let the ingredients simmer on low flame for 5 minutes with occasional stirring. Add salt to taste and sauteed mushrooms to the gravy.
Serve the flavourful mushroom curry after garnishing with coriander leaves and a tablespoon of fresh cream.
